Courgettes are one of the most versatile vegetables. You can alter their taste through various techniques such as frying roasting boiling etc. Their greatest partner is definitely cheese, these two compliment each other perfectly. Courgettes make excellent soups, tarts, chips, salads, pasta and curries to name but a few.
The courgette is part of the same family as marrows and other squashes. Many people think courgettes are immature marrows, because of their size, but technically they are a different member of the same family.

This recipe focuses on griddling the courgettes giving them a sweet smoky taste. The sharpness of the blue cheese balances the sweetness of the courgettes and onions. The addition of cherry tomatoes adds a deep richness to the tart. The courgette, Onion and blue cheese tart is served with a green salad and tomato dressing.
Sweet Potato, Courgette, Hazelnut & Pear Salad
In this recipe roasting the courgettes gives them an intense flavour. The roast courgettes nicely compliment the sweet potatoes, and roast pears. The dish also has a warmth to it created by the chilli and sesame oil. The addition of rosemary to the dish adds an important savoury touch.
To serve the sweet potato, courgette hazelnut and pear salad place on a bed of green leaves, preferably spinach. The dish is completed with lightly roasted hazelnuts and a garlic and balsamic vinaigrette.

Indian Curried Courgette Meatballs
This recipe is an extremely original use of courgettes. The courgettes are grated and then moulded into “meatballs” with a touch of three traditional Indian ingredients chilli, ginger & coriander. Frying the courgette balls, give then a lovely crispy outer shell with a soft middle.
Serve the courgette meatballs in a classic creamy Indian sauce with tomato, onions and cream. The sauce has heat and spice from the turmeric, cumin, cayenne, and garam masala. To add an extra taste dimension to the dish serve the courgette balls on a bed of brown rice.
