Cut the courgettes into slices and cook in a griddle pan till lightly charred to give a light smoky taste. Fry the onions in butter till soft add the balsamic vinegar and sugar cook till the onions are caramelised and have a delicious sweet and sour taste. Cut the cherry tomatoes in half and the cheese into cubes. The courgettes and onions are placed on the puff pastry and topped with the onions, tomato halves and cheese all inside the border, egg wash the borders and bake in the oven for 20 minutes.
