This recipe is one of my favourites and is by Madhur Jaffery and is from her recipe book "Eastern Vegetarian Cooking"
Courgettes are a difficult vegetable to curry due to there tendency to go very soft when cooked to overcome this problem the courgettes are grated and formed into courgette balls. The courgette balls are made with grated courgette, fresh chopped chilli and coriander, finely chopped onions, and fresh ginger. To courgette balls are held together with gram flour and fried. The courgette balls are served in a creamy tomato curry sauce made with fresh tomatoes skinned and chopped, cooked with chopped onions, and a subtle mix of spices, cayenne pepper, coriander, turmeric, cumin the sauce is finished with cream and garam masala.
