Lentils are a type of pulse similar to beans and chickpeas, the most commonly found lentils are large green lentils and split red lentils which we usually use as they are easy to find in the supermarket. Red lentils cook quickly so we use the dried variety, large green lentils take a lot longer to cook so we use tinned lentils for all of our recipes.
