Sichuan Chinese Chicken Wings Recipe

These spicy Sichuan chicken wings make a deliciously simple starter, the wings are coated in a hot and spicy Sichuan sauce made with Sichuan pepper, chilli flakes, soy sauce, garlic, ginger and brown sugar. These Asian-style chicken wings are topped with roast peanuts and chilli flakes.


Recipe Ingreds

wings

  • 1 tsp baking powder
  • 600 grams chicken wings
  • 15 grams salted peanuts
  • 1 tsp salt
  • 1 tsp chilli flakes

Sauce

  • 1 tsp black pepper corns
  • 1 tsp chilli flakes
  • 4 cm fresh ginger
  • 4 cloves garlic
  • 1 tsp sesame oil
  • 4 tbsp soy sauce
  • 10 grams brown sugar
  • 1 tsp sunflower oil
  • 45 ml white wine

Step 1

  • set the oven to 165C 365F or gas mark 3
  • add the salt and baking powder to the bowl add the chicken wings
  • toss the wings in the salt and baking powder
  • place the rack on the baking tray

Step 2

  • place the chicken wings on the rack, place in the oven and bake for 10 mins
  • remove the chicken from the oven
  • turn the chicken wings over, return to the oven cook for 10 mins

Step 3

  • remove the chicken from the oven
  • set the oven to 220C 425F or gas mark 7
  • return the chicken to the oven for 10 minutes

Step 4

  • while the chicken is cooking
  • peel and crush the garlic using the garlic crusher or chop finely
  • peel and grate the ginger

Step 5

  • heat the frying pan
  • dry fry the pepper corns and chilli flakes
  • for a minute or 2
  • empty the contents of the frying pan into a mortal and pestle
  • grind the spices

Step 6

  • add all the sauce ingredients to the sauce pan
  • stir to mix the ingredients
  • cook over a medium heat
  • heat the sauce until it thickens
  • set a side

Step 7

  • remove the chicken from the oven
  • remove the rack and chicken wings from the baking tray
  • Add the sauce to the baking tray and stir to mix the chicken juices and the sauce together
  • return the wings to the tray and coat them with the sauce
  • return to the oven and bake for 5 mins

Step 8

  • while the chicken is cooking
  • chop the peanuts
  • remove the chicken from the oven

Step 9

  • sprinkle the cooked chicken wings with the chopped nuts and chilli flakes
  • serve immediately
