Spanish Chorizo and Manchego Pizza with a Cress and Almond Salad

Chorizo & Sweet Potato Pizza with Green Almond Salad Recipe

A mouth watering Spanish Chorizo and Manchego pizza with a selection of tasty Spanish ingredients, chorizo, sweet potato, red onions, manchego cheese and mozzarella. Served with a cress and almond salad with a creamy sour cream ,garlic, parsley and chive dressing. A delicious pizza without tomato sauce!

Recipe Ingreds

Pizza

  • 200 grams pizza dough
  • salt (to taste)
  • black pepper (to taste)
  • 100 grams sliced chorizo
  • 50 grams mozzarella
  • 50 grams manchego cheese
  • 0.5 tsp oregano (dried)

Salad

  • 40 grams flaked almonds
  • 1 packet cress
  • 150 grams Salad leaves

topping

  • 1 whole sweet potato
  • 1 whole red onions

Dressing

  • 4 tbsp water
  • 1 cloves garlic
  • 1 tsp fresh lemon juice
  • 0.5 tbsp honey
  • 50 ml sour cream
  • 2 tbsp mayonnaise light
  • 1 tbsp fresh chives
  • 2 sprig fresh parsley
  • salt (to taste)
  • black pepper (to taste)

Recipe with pictures Steps

Step 1

  • prepare the dough by following the instructions on the packaging
  • place the dough on greaseproof paper on a baking tray
  • set the oven to 200C 400F or gas mark 6

Step 2

  • peel and finely slice the potatoes
  • peel and finely slice the onion(s)

Step 3

  • grate the cheeses
  • add 3/4 of the cheese on top of the pizza dough
  • sprinkle with oregano
  • season with salt and pepper

Step 4

  • place the sweet potato on top of the pizza
  • place the chorizo slices on top of the pizza
  • place the red onion on top of the pizza

Step 5

  • sprinkle the remaining cheese over the pizza
  • place in the oven
  • cook for 20 mins

Step 6

  • peel and crush the garlic
  • squeeze the lemon(s) .
  • wash and finely chop the fresh parsley
  • wash and finely chop the chives
  • mix the dressing ingredients together in a bowl

Step 7

  • toast the almonds by dry frying in the frying pan
  • wash mixed leaves and place in a serving bowl.
  • Add the cress
  • add the dressing to the salad
  • toss the salad
  • sprinkle with almonds

Step 8

  • remove the pizza from the oven
  • place a slice of pizza on a serving plate
  • serve with the salad

What is pizza

How to make chorizo pizza

You can make your pizza dough yourself but we use pre-prepared dough found in the chill cabinet to make this a quick and easy evening meal. This tasty pizza is made without tomato sauce, the secret is to have a mixture of cheeses and put half the cheese directly on to the dough then the topping and finish with a second layer of cheese. This stops the dough from becoming to dry. 

To make the pizza prepare the dough, sprinkle half the mozzarella and manchego cheese and the oregano on to the dough, place the thinly sliced sweet potatoes onto the pizza, then the chorizo slices and then the sliced red onions sprinkle the remaining cheese over the top, Bake in the oven till the cheese has melted and the sweet potato is cooked.
