Char Siu Duck Legs with Asian Slaw Recipe

A delicious Chinese char siu duck salad. duck legs marinated and cooked in a char sui sauce of garlic, ginger, chilli, honey and soy sauce. The succulent duck is shredded and served with an Asian slaw made with carrots, cabbage, celery, cucumber, and herbs and dressed with a lime, honey, ginger and soy sauce dressing

Recipe Ingreds

Duck

  • 2 single duck legs
  • 1 tbsp sesame seeds

Salad

  • 1 whole carrots
  • 0.5 whole cucumber
  • 40 grams red cabbage
  • 1 tbsp sesame seeds
  • 8 sprig fresh coriander
  • 2 stick celery

Marinade

  • 1 tbsp fish sauce
  • 3 cloves garlic
  • 0.5 tbsp hoisin sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 0.5 tsp chinese five spice

Dressing

  • black pepper (to taste)
  • 0.5 tbsp honey
  • 0.5 whole lime
  • 0.5 tbsp mirin
  • salt (to taste)
  • 1.5 tbsp soy sauce
  • 1 tbsp sunflower oil
  • 1 cm fresh ginger

Step 1

  • Make the marinade
  • peel and crush the garlic using the garlic crusher or chop finely
  • add to the rectangular pie dish
  • mix the marinade ingredients together

Step 2

  • add the duck to the marinade
  • refrigerate for at least two hours preferably overnight

Step 3

  • set the oven to 180C 350F or gas mark 4
  • remove the meat from the fridge
  • Drain the marinade into a small pan and set a side
  • add the duck to the casserole dish
  • ensure the duck is skin side up
  • place in the oven
  • cook for 30 mins

Step 4

  • squeeze the lime(s)
  • peel and grate the ginger
  • mix all the ingredients together apart from the lime juice
  • add the lime juice a tsp at a time till matches your personal tastes
  • season with salt and pepper
  • set a side

Step 5

  • wash and chop the celery
  • wash and chop the cabbage into fine strips
  • peel the cucumber and chop into matchsticks
  • peel and cut the carrots into matchsticks

Step 6

  • wash and finely chop the fresh coriander
  • mix all the salad ingredients together in a bowl
  • add 1/4 of the dressing
  • toss the salad
  • set a side

Step 7

  • place the pan of marinade onto the heat
  • Bring to the boil and boil for a few minutes
  • cook until the mixture is thick and syrupy
  • Remove the star anise
  • set a side
  • toast the seeds in the frying pan
  • set a side to cool

Step 8

  • remove the duck from the oven
  • brush with the marinade
  • return to the oven
  • cook for 30 mins
  • or until the duck is tender
  • remove from the oven
  • sprinkle with sesame seeds

Step 9

  • shred the meat using two forks
  • place on a serving plate

Step 10

  • add the salad
  • serve with additional dressing

  • serve immediately

How to make homemade char sui duck leg salad

Duck legs cooked in a Chinese char siu sauce then shredded and served on a delicious Chinese coleslaw salad. To make this dish the duck legs are marinated in a char siu sauce made with fish sauce, hoisin, garlic, honey, rice vinegar, soy sauce and Chinese five spice. The  legs are removed from the marinade and roasted in the oven for 30 minutes. The marinade is placed in a pan and thickened. The duck is removed from the oven and painted with the marinade and returned to the oven to crisp. Remove from the oven allow to cool a little. To make the Asian coleslaw slice the carrots, cabbage, celery, cucumber and chop the fresh herbs mix together. To make the dressing mix the honey, lime, ginger mirin, oil and soy sauce and add to the salad. Shred the duck with two forks place the salad on a plate and add the shredded duck on top of the salad

What is Char Sui

Char Siu is a Cantonese barbecue sauce usually used for pork. The sauce is made traditionally from honey, five spice, red bean curd, soy sauce, hoisin sauce and rice wine. Char sui meat is usually consumed in a bun or with rice or noodles. The sauce can be used for chicken, duck and goose as well as pork. There are variations of Char Siu across Asia.
