Duck legs cooked in a Chinese char siu sauce then shredded and served on a delicious Chinese coleslaw salad. To make this dish the duck legs are marinated in a char siu sauce made with fish sauce, hoisin, garlic, honey, rice vinegar, soy sauce and Chinese five spice. The legs are removed from the marinade and roasted in the oven for 30 minutes. The marinade is placed in a pan and thickened. The duck is removed from the oven and painted with the marinade and returned to the oven to crisp. Remove from the oven allow to cool a little. To make the Asian coleslaw slice the carrots, cabbage, celery, cucumber and chop the fresh herbs mix together. To make the dressing mix the honey, lime, ginger mirin, oil and soy sauce and add to the salad. Shred the duck with two forks place the salad on a plate and add the shredded duck on top of the salad

Char Siu is a Cantonese barbecue sauce usually used for pork. The sauce is made traditionally from honey, five spice, red bean curd, soy sauce, hoisin sauce and rice wine. Char sui meat is usually consumed in a bun or with rice or noodles. The sauce can be used for chicken, duck and goose as well as pork. There are variations of Char Siu across Asia.
