Sichuan Chicken Wings

Crispy chicken wings, coated in a hot and spicy sichuan sauce. The sichuan sauce is made with roasted sichuan peppers, chilli flakes, soy sauce, garlic, ginger and palm sugar. The dish is topped with roast peanuts and chilli flakes.

Step 1

set the oven to 165C 365F or gas mark 3

Step 2

toss the chicken in the salt and baking powder

Step 3

Place the rack on the baking tray, place the chicken on the rack, place in the oven. Cook for 15 mins, turn the chicken over cook for 15 mins more.

Step 4

remove from the oven. Set the oven to 220C 425F or gas mark 7 cook for 10 mins

Step 5

while the chicken is cooking, peel and crush the garlic using the garlic crusher or chop finely

Step 6

Peel and grate the ginger

Step 7

heat the frying pan, dry fry the ground pepper and chilli flakes, for a minute or 2

Step 8

Empty the contents of the frying pan into a mortal and pestle, grind the spices

Step 9

Add all the sauce ingredients to the sauce pan, add the ground spices to the pan, stir to mix the ingredients. Cook over a medium heat, cook till sauce thickens set a side

Step 10

Remove the chicken from the oven. Remove the rack of wings, add the sauce to the chicken juices stir to mix the ingredients. Add the chicken wings to the sauce, coat the wings in the sauce

Step 11

Return to the oven, cook for 5 minutes

Step 12

while the chicken is cooking chop the peanuts
remove the chicken from the oven

Step 13

sprinkle with nuts and chilli flakes, serve immediately

  • 4 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tbsp palm sugar
