Our summer salad healthy meal plan has three delicious salads, a simple pasta salad with traditional Greek ingredients of feta, tomatoes, and olives. The pasta salad has broad beans for protein, and fresh rosemary for flavour. Our second salad is a mixture of fruit, vegetables and nuts, chilli roasted sweet potatoes, pears and courgettes and roast hazelnut , served on a bed of spinach and dressed in sesame and balsamic dressing. The final salad is a simple green salad with butter bean patties, the patties are a delicate flavour of butter beans, parsnips, carrots, parsley and lemon, the salad and patties are served with a tomato and pesto dressing.
