Make the salsa by finely chopping the onions and chilli, cutting the cucumber and tomatoes into cubes, chop the fresh coriander and mix all the ingredients together and set a side. Make the chipotle cream by mixing together the chipotle paste, mayo and sour cream.
Slice the mushrooms, courgettes, onions and bell peppers, lightly fry the onions and peppers add the courgettes and mushrooms and fry till golden brown. Add the garlic and fajita spices cook for two or three minutes.
While the fajita is cooking peel and slice the avocado mix in the lime juice, add the sliced lettuce
Once the fajita vegetables are cooked, place in the wrap with a spoonful of salsa and a dollop of chipotle cream.
