Thai Chicken Goujons with Sweet Chilli Sauce Recipe

Crispy Thai chicken goujons, chicken strips coated in a mixture of Thai warm spices of black pepper corns, fennel seeds, cloves, caraway seeds and star anise. lightly fried and served with a sweet chilli sauce

Recipe Ingreds


  • 2 fillet chicken breasts
  • 1 . sunflower oil (for frying)
  • 3 tbsp sweet chilli sauce


  • 2 tsp black pepper corns
  • 2 tsp caraway seeds
  • 1 tsp cinnamon
  • 5 whole cloves
  • 1 tsp fennel seeds
  • 150 grams plain flour
  • salt (to taste)
  • 2 whole star anise
  • 2 whole egg

Step 1

  • heat a frying pan
  • Dry fry the peppercorns
  • remove the seeds from the star anise
  • place in a spice grinder or mortar and pestle with the peppercorns, caraway seeds, cloves and fennel seeds
  • grind the spices
  • add the salt and cinnamon to the spices

Step 2

  • put the flour and 1/4 of the spice mix onto a plate
  • mix the ingredients
  • break the egg(s) into the shallow bowl and beat with a fork
  • place the remaining spice mix on a plate

Step 3

  • organise the dipping ingredients into a row with the spice mix first, then the egg and finally the flour
  • slice the chicken fillets into small strips or goujons
  • take the chicken strips or goujons and dip into the spice mix, then the egg and finally the flour
  • repeat for each chicken strip.

Step 4

  • heat about 21/2 cms of frying oil in a frying pan
  • Drop a breadcrumb into the oil to check its hot enough it should fizzle
  • cook the chicken in batches, of 3 to 4 at a time
  • cook till golden brown
  • place on kitchen paper
  • keep warm

Step 5

  • place the chicken and dip on a serving plate
  • serve immediately
