A simple marinade of chopped fresh ginger and garlic rubbed into the chicken thigh beneath the skin and marinaded overnight. The chicken is pan fried skin side down till golden brown. The honey, soy sauce and teriyaki sauce is mixed together and added to the frying pan, the sauce is cooked till it reaches a light syrup. The teriyaki chicken is sliced and served on a bed of freshly cooked rice flavoured with ginger and chives.
This dish is quick to cook and tastes delicious, the ginger and garlic marinade makes the thighs taste amazing, the star of this dish is the sweet and savoury tasting crispy chicken skin full of flavour from the honey and teriyaki sauce.
This dish is quick to cook and a great evening meal all year round, we serve it with ginger and chive rice, but it is amazing with onion rice or soy rice. In the summer serve the chicken with an Asian style salad.
