Greek lemon & oregano chicken with a rice salad with red pepper, feta flavoured with chilli and lemon and served with Tzatziki

Greek Lemon Chicken with Rice Feta Salad & Tzatzki Recipe

Greek marinated chicken, griddle sliced and served on a bed of watercress with tzatzki and a salad of rice, chilli, red peppers, lemon, parsley and feta.


Recipe Ingreds

Chicken

  • black pepper (to taste)
  • 2 chicken breasts
  • 2 tsp oregano (dried)
  • 1 lemon
  • 2 tbsp olive oil
  • salt (to taste)
  • 1 tub tzatziki
  • 35 grams feta cheese

Salad

  • 1 bell pepper (red)
  • 0.5 tsp oregano (dried)
  • 0.5 fresh chilli
  • 3 sprig fresh parsley
  • 1 cloves garlic
  • 0.5 lemon
  • 0.5 onions
  • 1 packet microwave brown rice
  • 30 grams watercress
  • salt (to taste)
  • black pepper (to taste)
  • 1 tbsp olive oil

Recipe with pictures Steps

Step 1

  • Make the marinade
  • squeeze the lemon(s) .
  • mix together olive oil, juice of the lemon, oregano, salt & pepper in the rectangular pie dish

Step 2

  • place the chicken breast on some cling film fold the cling film over the chicken and then using a rolling pin, bash the chicken till it is about 2 cms thick all over
  • place the chicken in the marinade
  • refrigerate for at least two hours preferably overnight

Step 3

  • Take the chicken out of the fridge

Step 4

  • heat the olive oil in the frying pan
  • peel and chop the onion(s) finely
  • add to the frying pan
  • cook till soft

Step 5

  • wash and finely chop the chilli
  • add to the frying pan
  • peel and crush the garlic using the garlic crusher or chop finely
  • add to the frying pan

Step 6

  • warm the precooked rice by following the instructions
  • add to the frying pan
  • add the oregano

Step 7

  • zest the lemon(s)
  • squeeze the lemon(s) .
  • add the lemon zest and juice to the frying pan
  • taste and season with salt and pepper if necessary
  • remove from the heat

Step 8

  • wash and dice the red pepper
  • wash and finely chop the fresh parsley
  • Add the red pepper and parsley to the frying pan
  • mix the ingredients
  • set a side

Step 9

  • add the marinated chicken to the griddle or frying pan
  • turning regularly
  • cook till the juices run clear
  • leave for 5 minutes
  • slice the chicken diagonally

Step 10

  • cut the lemons into wedges
  • place one serving of rice onto a plate
  • place the watercress on the plate

Step 11

  • place the chicken on top of the watercress
  • crumble the cheese over the top of the rice
  • serve with the tzatziki and a couple of lemon wedges
