Coat the chicken in the Cajun spices, and flatten slightly
with a rolling pin, then griddle the chicken until golden brown and cooked till
the juices run clear. While the chicken is cooking make the marinade for the
salad by adding the oregano, crushed garlic, lemon juice, mustard olive oil,
vinegar and tabasco. Make the salad by placing the salad leaves, and watercress,
drained black beans, sweetcorn and halved cherry tomatoes in a bowl and mix.
When the chicken is cooked slice it add the salad dressing to the salad and
serve the salad in a bowl with the sliced chicken on the top
