The dish is infused with fresh ginger, garlic, and a touch of chilli, creating a savory-spicy balance that pairs beautifully with the sweet and tangy homemade sauce made from soy sauce, honey, sriracha, and tomato puree. Served over fragrant sesame-infused rice, 


Recipe Ingreds

Mushroom stir Fry

  • salt (to taste)
  • 4 whole spring onions
  • 1 tbsp sunflower oil
  • 2 tsp sesame oil
  • 1 tbsp Sriracha sauce
  • 1 tbsp honey
  • 2 tbsp soy sauce
  • 125 grams shiitake mushrooms
  • 400 grams mushrooms
  • 100 grams broccoli
  • 100 grams cashew nuts
  • 2 cm fresh ginger
  • 1 cloves garlic
  • 0.5 whole fresh chilli
  • 1 tbsp white wine
  • 1 tbsp tomato puree
  • black pepper (to taste)

Rice

  • 1 packet microwave white rice
  • 2 cm fresh ginger
  • 3 sprig fresh chives
  • 1 tsp sesame oil

How to make mixed mushroom stir fry with broccoli

  • Make the sauce by combining the sesame oil, wine, soy sauce, honey, sriracha, and tomato paste in a small bowl

Step 2

  • wash and cut the broccoli into florets
  • peel and chop the garlic
  • peel and grate the ginger
  • cut the chilli in half remove the seeds and finely chop
  • wash and finely slice the spring onions

Step 3

  • wash and slice the mushrooms
  • add the mushrooms to the pan in batches and cook till golden brown
  • set the mushrooms aside
  • add the chilli, garlic and ginger to the wok, cook for a minute or two
  • add the cashew nuts to the wok
  • cook for a minute or two

Step 4

  • add the broccoli and spring onions to the wok
  • return the mushrooms to the frying pan
  • add the sauce to the pan and allow to thicken
  • season with salt and pepper

Step 5

  • peel and grate the ginger
  • Add the sesame oil to the frying pan
  • Add the ginger to the frying pan
  • wash and chop the chives
  • warm the microwave rice
  • add the rice and the chives to the frying pan
  • heat through and then keep warm

Step 6

  • share the rice between the serving plates
  • add the stir fried mushrooms to the serving plate

Onions - spring onions are the best for this dish as they need to cook quickly and have a sharp freshness

Mushrooms - we use a mixture of shiitake and button mushrooms, but feel free to use a mixture of mushrooms of your choice 

Broccoli - this adds a green freshness to the dish 

Nuts - we use cashew nuts as the mushrooms have a subtle flavour and don't want to be overwhelm then 

Spices - chilli for heat using a fresh red chilli, fresh garlic for savoury and ginger for a sweet heat

Sauce Ingredients

Wine - you can use any type of medium to dry white wine 

tomato puree - a traditional shop bought tomato puree or paste is perfect for this recipe 

Soy Sauce - use either a dark or light sauce depending on your personal taste

Honey- the honey is added for sweetness any standard honey is perfect

Sriracha - for heat and spice, if you like your stir fry hot then add extra sriracha

sesame oil - is essential for the nutty flavour
