Vegetable and Edamame Stir Fry with Spicy Rice Recipe

This delicious edamame stir fry has oriental vegetables and edamame beans stir fried and coated in ginger, garlic, honey , soy and teriyaki sauce, and is served on a bed of ginger and chive rice perfect for vegetarians and vegans

Recipe Ingreds

stir fry

  • 2 cm fresh ginger
  • 1 cloves garlic
  • 80 grams edamame beans
  • 1 packet oriental vegetable stirfry mix
  • 0.5 tbsp honey
  • 3 tbsp teriyaki sauce
  • 1 tbsp soy sauce

Rice

  • 1 tbsp fresh chives
  • 2 cm fresh ginger
  • 100 grams basmati rice

How to make edamame stir fry and rice

  • add some boiling water to the pan
  • add the rice and cook till soft

Step 2

  • peel and crush the garlic using the garlic crusher or chop finely
  • defrost the edamame beans
  • peel and grate the ginger

Step 3

  • Heat the wok add a spot of oil
  • add the garlic and ginger to the wok
  • cook for a minute or two
  • add the edamame beans to the wok
  • cook for 3 to 4 mins

Step 4

  • peel and grate the ginger
  • wash and chop the chives
  • rinse and drain the rice
  • add the ginger and chives to the rice
  • keep the rice warm on a low light

Step 6

  • add the stir fry vegetables to the wok
  • cook for 3 to 4 mins
  • mix the teriyaki sauce, soy sauce and the honey together
  • add to the wok
  • cook till vegetables are tender
  • remove the vegetables from the wok

Step 8

  • add the rice to the serving plate
  • place the vegetable and edamame stir fry on top of the rice
  • serve immediately

Edamame beans - we use frozen edamame beans as these gives the best crunch 

Spices -  the dish is flavoured with garlic cloves and freshly grated ginger

Oriental vegetables - most supermarkets do an oriental mix, you can buy the ingredients separately but it can end up expensive and you will have lots of leftovers so we recommend a supermarket mix

Teriyaki Sauce ingredients

honey - any type of runny honey is perfect for this dish

teriyaki sauce - Teriyaki is Japanese sauce and is a glaze used on meat and vegetables glazed in a sauce of sugar, mirin and soy sauce. The name comes from the noun "teri" which means lustre and refers to the glaze the sauce leaves on the food cooked in the sauce

soy sauce- A dark soy sauce is best for this dish
