Lamb, Sweet Potato & Apple Traybake with Couscous Recipe

Slow cooked lamb with sweet potatoes, red onions and apples flavoured with chilli, coriander, fennel, rosemary, ginger and honey. The lamb is served with almond and cumin couscous


Recipe Ingreds

Traybake

  • 1 leaves bay leaf
  • 6 sprig fresh coriander
  • 2 tbsp honey
  • 1 whole red onions
  • 2 whole sweet potato
  • 300 ml water
  • 30 ml yoghurt
  • 1 tbsp olive oil
  • 300 grams cooking apples

lamb

  • black pepper (to taste)
  • 1 tsp chilli flakes
  • 3 tsp coriander seeds
  • 1 tsp fennel seeds
  • 2 cm fresh ginger
  • 3 sprig fresh rosemary
  • salt (to taste)
  • 2 tbsp sunflower oil
  • 2 whole lamb neck fillet

Couscous

  • 10 grams flaked almonds
  • 120 grams cous cous
  • 0.25 tsp ground cumin
  • 0.25 cube stock cube chicken
  • 250 ml water (boiling)
  • 8 sprig fresh coriander

Recipe with pictures Steps

Step 1

  • grind the seeds
  • wash and finely chop the fresh rosemary
  • peel and grate the ginger

Step 2

  • mix the rosemary, seeds, chilli flakes and ginger together in a bowl
  • season with salt and pepper
  • add the oil
  • mix the ingredients

Step 3

  • using half the marinade (place the remaining marinade in the fridge)
  • massage the marinade into the meat
  • place the meat in the rectangular pie dish
  • cover with cling film
  • refrigerate for at least two hours preferably overnight

Step 4

  • remove the meat from the fridge
  • remove the marinade from the fridge
  • set the oven to 190C 375F or gas mark 5

Step 5

  • peel and cut the sweet potatoes into chunks
  • peel and chop the onion(s) into eighths
  • add to the roasting tin
  • add the remaining marinade
  • mix the ingredients

Step 6

  • heat the olive oil in the frying pan
  • add the lamb
  • cook till golden brown
  • add to the roasting tin

Step 7

  • peel and core the apples
  • cut into eighths
  • add the apples to the lamb frying pan
  • cook for a minute or two
  • add the contents of the frying pan to the roasting tin

Step 8

  • add the bay leaf and water to the roasting tin
  • place in the oven
  • cook for 1 and 1/2 hours
  • or until the meat is cooked

Step 9

  • 10 minutes before the traybake is ready
  • remove from the oven
  • Add the honey and stir
  • return to the oven

Step 10

  • add the stock cube to boiling water
  • add the cumin to the stock
  • add the couscous to the bowl
  • add the stock to the couscous
  • set a side

Step 11

  • heat the frying pan
  • add the flaked almonds
  • cook till golden brown
  • mix the almonds into the couscous
  • wash and finely chop the fresh coriander
  • add to the bowl
  • set a side

Step 12

  • remove the traybake from the oven
  • slice the lamb

Step 13

  • mix the apple and vegetable mix from the roasting tin into the couscous
  • add the couscous to a serving plate

Step 14

  • add the lamb
  • sprinkle with coriander
  • serve with a spoon of yogurt
  • serve immediately

How to cook lamb and sweet potato tray bake with apple

 This simple traybake is packed full of flavour, it uses a spicy rub to marinate the meat and flavour the overall dish. The spicy rub is made of chilli flakes, coriander seeds, fennel seeds, fresh ginger and rosemary. The spice rub is massaged into the lamb  and left to marinate overnight. The lamb is tray baked with apples, sweet potatoes, and flavoured with bay leaves and honey. The lamb is served with couscous flavored with cumin, almonds and coriander.
