Lamb, Aubergine, Tomatoes and Garlic Traybake Recipe

A Mediterranean tray bake with a rack of lamb, aubergines, tomatoes and garlic, roasted in the oven till the lamb is crisp and golden and the vegetables deliciously soft and caramelised once cooked serve with mint oil

Recipe Ingreds


  • 1 whole aubergine
  • black pepper (to taste)
  • 1 tsp oregano (dried)
  • 4 cloves garlic
  • 1 whole rack of lamb
  • salt (to taste)
  • 3 whole tomatoes
  • 1 tbsp olive oil


  • 8 sprig fresh mint
  • 4 tbsp olive oil
  • 2 tbsp red wine vinegar
  • salt (to taste)
  • 2 grams caster sugar
  • black pepper (to taste)

Recipe with pictures Steps

Step 1

  • wash and half the tomatoes
  • add to the roasting tin
  • peel the garlic
  • add to the roasting tin

Step 2

  • cut the aubergines into 2 cms thick slices
  • using the pastry brush, brush each aubergine slice with a little oil
  • cook the aubergine slices in batches in the frying pan turning regularly until golden brown
  • add to the roasting tin
  • add the oregano
  • season with salt and pepper
  • set the oven to 180C 350F or gas mark 5

Step 3

  • heat the frying pan
  • add the remaining oil
  • brown the lamb
  • add to the roasting tin
  • place the roasting tin with the lamb and vegetables into the oven
  • cook for 30 mins

Step 4

  • while the lamb is cooking
  • make the sauce
  • place the mint salt and sugar into a blender
  • add the vinegar and oil
  • blend till smooth
  • empty into a bowl
  • season with salt and pepper

Step 5

  • remove the lamb from the oven
  • rest for 5 mins
  • cut the rack into chops
  • add the vegetables
  • serve with the sauce
