To make this dish cook the pasta till al dente, cut the gammon into squares and cook till crisp place on a plate and set aside. Chop the leeks and spring onions add to the frying pan and cook till soft, Crush the garlic and add to the pan cook for a minute or two. Add the cream and cook till the sauce thickens a little. Add the gammon and grated parmesan, mix and season with salt and pepper. Add the cooked pasta to the frying pan if the sauce is a little thick add a touch of the pasta water. Sprinkle with thyme leaves and serve.
