A delicious bacon and brie pasta fusilli mixed with crispy squares of smoked bacon and fresh garden peas, all is coated in a simple brie sauce, flavoured with basil and freshly ground black pepper, and finished with thin shavings parmesan.
Cook the pasta in boiling water till just al dente, while the pasta is cooking, cut the bacon into squares and fry till crisp. Cut the brie into small squares, add the cream and brie to the bacon, cook till the cheese melts, drain the pasta reserving a little cooking water. Return the pasta to the pan and add the brie and bacon sauce, with a little pasta water to loosen the sauce. Serve with a sprinkle of chopped basil.

We have used fusilli but penne or spaghetti work just as well, use a plain pasta rather than a whole wheat or flavoured one as they will change the overall flavours of the dish. You need a creamy brie like cheese for this dish if you have leftover camembert you can use this, or a creamy goats cheese, be careful if you choose goats cheese as it has a stronger taste so use less cheese and a little more cream.
