This quick cook vegetarian mushroom and brie pasta is ideal for a fast veggie dinner, Fusilli pasta twists mixed with crispy fried mushrooms and fresh peas, lightly coated in a brie cheese and cream sauce flavoured with black pepper and basil. Serve the pasta with crispy garlic bread and for extra decadence add some parmesan shavings .

This simple pasta recipe, has delicious fusilli pasta served in a creamy mushroom and brie sauce. To make this dish cook the pasta in boiling water, slice and fry the mushrooms till lightly caramelised. Cut the brie into small squares, add the cream and brie to the mushrooms, cook till the cheese melts then add the peas. Drain the pasta reserving a little cooking water. Return the pasta to the pan and add the brie and mushroom sauce, with a little pasta water to loosen the sauce. Serve with a sprinkle of chopped basil.
For other dinner ideas you can change the pasta type, we have used fusilli, but penne or spaghetti works well, use a plain pasta rather than a whole wheat or flavoured one as they will change the overall flavours of the dish.
You can also change the cheese, you will need a creamy brie like cheese like camembert, or a creamy goat’s cheese. Be careful if you choose goats cheese as it has a stronger taste so use less cheese and a little more cream.
When draining the pasta always save some of the pasta water as it is great for losing your pasta sauce, if it becomes too thick.
