Bacon and Tomato Pasta with Camembert Recipe

A simple easy to make camembert pasta, with al dente penne mixed with crispy bacon, and served in a tomato, gooey camembert and emmenthal sauce, flavoured with basil, garlic and chilli flakes. An ideal quick cook dinner

Recipe Ingreds

Pasta

  • 120 grams bacon (smoked)
  • black pepper (to taste)
  • 50 grams camembert cheese
  • 0.5 tsp chilli flakes
  • 60 ml double cream
  • 40 grams emmenthal cheese
  • 4 sprig fresh basil
  • 1 cloves garlic
  • 1 tbsp olive oil
  • 25 grams parmesan or pecorino cheese
  • 200 grams penne pasta
  • salt (to taste)
  • 5 grams caster sugar
  • 1 tin tinned tomatoes small

Bread

  • 1 stick garlic bread

Step 1

  • half fill a pan with water and boil
  • add a spot of olive oil and a pinch of salt to the boiling water
  • add the penne to the boiling water and simmer until tender but with a slight bite

Step 2

  • set the oven to 200C 400F or gas mark 6
  • put the bread on the baking tray and place in the oven follow the instructions on packaging

Step 3

  • heat the olive oil in the frying pan
  • chop the bacon into pieces
  • add the bacon to the pan
  • cook till crisp and golden brown

Step 4

  • peel and crush the garlic using the garlic crusher or chop finely add to the bacon
  • cook for a minute or two
  • Add the chilli flakes, and tomatoes to the bacon
  • cook till sauce thickens to a jam like consistency
  • taste and add sugar if necessary

Step 5

  • cut the camembert into small cubes
  • grate the emmenthal
  • add the cheeses and cream to the tomato and bacon mixture

Step 6

  • drain the pasta and add to the sauce
  • if sauce is to tight add some of the reserved cooking water from the pasta
  • taste and season with salt and pepper if necessary
  • wash and tear the basil leaves
  • add the basil to the sauce saving a little to sprinkle on the top

Step 7

  • remove the garlic bread from the oven

Step 8

  • share the tomato and bacon pasta equally between the serving bowls
  • serve with garlic bread, grated parmesan and a sprinkle of basil

How to make bacon, tomato and camembert pasta

Begin by cooking the pasta until al dente, then prepare garlic bread in the oven. In a separate pan, crisp bacon and infuse it with garlic, chili flakes, and tomatoes until if form a rich, jam-like consistency. To this savoury mix, add creamy camembert, and add the grated emmental, and a dash of cream.  When the pasta is cooked, toss the penne in the sauce, ensuring it's well-coated and seasoned. Finish by dividing it between the serving bowls, then garnishing with torn basil leaves and serving alongside warm bread, grated parmesan, and a final sprinkle of fresh basil. This dish promises a delightful balance of flavours and textures, and perfect for any cheese lover

Top tips

  • If you are swapping for different cheeses Choose strongly flavoured ones to balance the other ingredients
  • Sometimes tinned tomatoes can be a little tart if they are, add a tiny bit of sugar to the sauce
