Slice the potatoes, peppers, onions and chorizo, fry in a frying pan with crushed garlic till the vegetables are soft allow to cool a little. Beat the eggs in a bowl with the paprika, add the contents of the frying pan into the eggs with the chopped parsley, and grated cheese and mix. Add the egg mixture to the frying pan, cook till the eggs are set and then brown under the grill.
Our egg tortilla is a traditional potato tortilla but we have added so delicious herbs and spices to give it that extra special touch with Chorizo, garlic, paprika and parsley
