Spinach and Feta Filo Parcel with Tzatzki Recipe

A delicious Greek starter of crispy spinach and feta filo parcels, filo pastry stuffed with a mouth watering mixture of wilted spinach, crispy onions and creamy feta cheese, the stuffing is lightly flavoured with oregano, garlic, nutmeg and lemon juice. These filo parcels are complimented beautifully by the creamy Tzatziki dip

Recipe Ingreds

Parcels

  • 20 grams butter
  • 3 sheets filo pastry
  • 1 tub tzatziki

Filling

  • 1 tsp oregano (dried)
  • 1 whole egg
  • 75 grams feta cheese
  • 2 cloves garlic
  • 0.25 tsp ground nutmeg
  • 0.5 tbsp olive oil
  • 1 whole onions
  • 250 grams Spinach
  • salt (to taste)
  • black pepper (to taste)
  • 0.5 whole lemon

Recipe with pictures Steps

Step 1

  • heat the olive oil in the frying pan
  • peel and chop the onion(s) finely
  • add to the frying pan
  • cook for 5 minutes

Step 2

  • peel and crush the garlic using the garlic crusher or chop finely
  • add to the frying pan
  • cook for a minute or two

Step 3

  • wash the spinach
  • remove the stalks
  • add the spinach to the large pan
  • place on a low light wilt the spinach

Step 4

  • squeeze out the access water from the spinach leave to cool
  • chop the spinach finely and place in a bowl

Step 5

  • add the onion mixture to the spinach
  • crumble the feta cheese over the mixture
  • squeeze the lemon(s) .
  • add the egg(s) to a bowl
  • beat the egg
  • add the egg, oregano, nutmeg and lemon juice to the spinach bowl
  • mix the ingredients
  • taste and season with salt and pepper if necessary

Step 6

  • set the oven to 180C 350F or gas mark 5
  • grease a baking tray
  • melt the butter in a small bowl in the microwave, or in a small pan
  • place the three sheets of filo under some cling film

Step 7

  • to make the filo parcel triangles
  • cut the filo in thirds lengthwise
  • take a layer of pastry and coat with melted butter using the pastry brush
  • place the spinach and feta mixture at the top of the filo pastry strip in a triangle shape leaving another triangle shape clear of mixture see picture above
  • fold the clear filo triangle over the spinach and feta filling then fold down the filo pastry strip, in triangles till you have formed a neat triangle shaped parcel
  • place on the baking tray

Step 8

  • repeat until you have completed all the parcels
  • place in the oven
  • cook for 20 mins
  • until golden brown

Step 9

  • remove the parcels from the oven
  • place two parcels on the serving plate
  • Add the tzatzki
  • serve immediately

How to make spinach and feta filo Parcels

The spinach mixture is placed in the top corner of a strip of filo and folded diagonally to form a triangular filo parcel. The parcels are cooked in the oven till golden brown and served with cool and creamy tzatziki
