Spinach and feta Filo Parcel with Tzatzki

Crispy parcels filled with spinach and feta cheese, flavoured with oregano and nutmeg, served with creamy tzatzki

How it's doneDirections

Step 1

Set the oven to 180C 350F or gas mark 4

Step 2

5 Minutes

Heat the olive oil in the frying pan.

Peel and chop the onion(s) finely, add to the frying pan and cook for 5 minutes.

Step 3

1 - 2 Minutes

Peel and crush the garlic using the garlic crusher or chop finely, add to the frying pan and cook for a minute or two.

Step 4

Wash the spinach and remove the stalks.

Add the spinach to the large pan, place on a low light to wilt the spinach.

Step 5

Squeeze out the access water and leave to cool.

Chop the spinach finely, add to the bowl.

Step 6

Add the onion mixture to the bowl.

Step 7

Add the feta cheese.

Step 8

Beat the egg.

Add the egg(s), oregano, nutmeg and lemon juice to the bowl.

Mix the ingredients, taste and season with salt and pepper if necessary.

Step 9

Grease a baking tray.

Step 10

Melt the butter in a small bowl in the microwave, or in a small pan.

Step 11

Place the three sheets of filo on some cling film.

Take a layer of pastry and coat with melted butter using the pastry brush.

Cut the filo in thirds lengthwise.

Place the mixture at the top of the pastry strip in a triangle shape leaving another triangle shape clear of mixture.

Fold over the filling then fold down the filo pastry strip in triangles till you reach the bottom.

Place on the baking tray

Repeat until you have completed all the parcels.

Step 12

Brush with egg wash, cook for 20 mins or until golden brown.

Step 13

Remove the parcels from the oven.

Place two parcels on the serving plate, add the tzatzki. Serve immediately

  • 75 grams Feta Cheese
  • 1 Egg
  • 1 tsp Dried Oregano
  • 1/2 pinch Dried Nutmeg
  • 1 tsp Fresh Lemon Juice
Parcels
  • 3 sheets Filo Pastry
  • 20 grams Butter
  • Salt - to taste
  • Black Pepper - to taste
To Serve
  • 1 tub Tzatziki
