Sopapilla Cheesecake

Sweet vanilla cream cheese sandwiched between crispy croissant dough and topped with crunchy sugar cinnamon and honey. Served with a little extra honey

How it's doneDirections

Step 1

  • Defrost the croissant dough
  • Set the oven to 180C 350F or gas mark 4
  • Grease the baking dish

Step 2

  • Whisk the cream cheese, sugar and vanilla together
  • Unroll the dough and cut to create two layers of pastry to fit into the dish

Step 3

  • Place one of the doughs on the base of the baking dish
  • Add the cream cheese mixture
  • Place the other dough over the top

Step 4

  • Mix the butter sugar and cinnamon together
  • Place small dots of the cinnamon mixture on the top of the dough place in the oven
  • Cook for 30 mins

Step 5

  • Remove from the oven
  • Drizzle with honey, cool, refrigerate

Step 6

  • Serve a slice of cheesecake
  • Drizzle with honey
