Smoked Bacon Hash with Mixed Salad

Potato, leek, cabbage and cherry tomato hash topped with griddled smoked bacon & halloumi served with a green salad coated in a tomato dressing

How it's doneDirections

Step 1

  • Peel the potatoes.
  • Slice potatoes into thick slices.
  • Half fill a large pan with water and boil.
  • Place the potatoes in the pan cook gently till the potatoes are soft.

Step 2

  • While the potatoes are cooking.
  • Make the tomato dressing by mixing together the olive oil, red wine vinegar, garlic (crushed) tomato puree, pesto, sugar, water. Season to taste with salt and pepper.
  • Add a little extra sugar if it is to tart

Step 3

  • Wash the leeks.
  • Remove the top and bottom of the leek(s).
  • Chop the white of the leeks finely.
  • Chop the green of the leeks roughly.
    Wash and chop the cabbage into fine strips.

Step 4

  • Drain the potatoes.
  • Roughly chop the potatoes.

Step 5

Add the remaining oil to the frying pan and heat.

Add the white of the leeks cook for a minute or two

Step 6

  • Add the potatoes to the pan
  • Cook the potatoes till golden brown.
  • Add the cabbage and green leeks cook for 5 minutes

Step 7

  • Peel and crush the garlic using the garlic crusher or chop finely.
  • Add the garlic to the frying pan.
  • Peel and grate the ginger add the ginger cook for a minute or two

Step 8

  • Wash the cherry tomatoes and then slice in half.
  • Add the tomatoes to the pan.
  • Grind the spices in the mortar and pestle.
  • Add the spices.
  • Taste and season with salt and pepper.

Step 9

  • While the tomatoes are cooking.
  • Heat the frying pan
  • Add a glug of olive oil.
  • Slice the halloumi into thick slices.
  • Add the halloumi slices.
  • Cut the bacon into squares.
  • Add the bacon to the pan fry till golden brown.
  • Place on kitchen paper set a side

Step 10

  • Wash mixed leaves and place in a serving bowl.
  • Place a cross on the top of the cucumber, then slice the cucumber to form quarters, sprinkle over the salad leaves.
  • Wash the cherry tomatoes and then slice in half sprinkle over the salad leaves.
  • Wash and chop the yellow pepper(s) into small pieces sprinkle over the salad leaves

Step 11

  • Serve the hash with the cheese and bacon.
  • Add the salad
  • Add the salad dressing

  • 1/4 cucumber
  • 40 grams Salad leaves
  • 1/2 bell pepper (green)
dressing
  • 4 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 clove garlic
  • 1 tsp tomato puree
  • 1 tsp pesto
  • 4 tbsp water
  • 1/4 tsp sugar granulated
  • Salt to taste
  • black pepper to taste
