Pasta Carbonara with Spinach Balls

Pancetta and tagliatelle pasta ribbons coated in a creamy parmesan sauce served with spinach balls



How it's doneDirections

Step 1

Wash the spinach, remove the stalks

Wilt the spinach in a pan, cook for a minute or two

Step 2

  • Remove from the heat, squeeze as much liquid as possible from the spinach.
  • Chop the spinach finely, add to the bowl, add the spices

Step 3

  • Peel and crush the garlic using the garlic crusher or chop finely add to the bowl.
  • Using a food processor blend the bread into fresh breadcrumbs.
  • Grate the parmesan onto the plate and mix the breadcrumbs and parmesan together with salt and pepper add to the bowl
  • Add to the bowl

Step 4

  • Beat the egg, add the egg(s) to the bowl and stir
  • The mixture should be a binding consistency
  • If the mixture is to wet add additional breadcrumbs
  • Roll the mixture into walnut sized balls
  • Shallow fry till golden brown,place on kitchen paper
    keep warm

Step 5

  • Half fill a medium pan with water and boil.
  • Add the pasta to the boiling water,  cook until tender but with a slight bite.

Step 6

while the pasta is cooking

  • Put the garlic bread on the baking tray and place in the oven follow cooking instructions on packaging.
  • Chop the pancetta into cubes
    fry the pancetta till golden brown and crispy
    set a side
  • Separate the whites and yolks, finely grate the parmesan, whip the yolks, cream and parmesan

Step 7

  • Reserve a few tbsps of cooking liquid from the pasta, drain the pasta
  • Add the egg mixture immediately to the pan with the pancetta.
  • Add the reserved pasta liquid.
  • Taste and season with salt and pepper if necessary
    Serve hot with the spinach balls

Step 8

Remove garlic bread from the oven, serve the pasta with the spinach balls and garlic bread

  • 25 grams parmesan

  • 1 stick garlic bread
