Lamb Aubergine Tomatoes and Garlic Traybake

A delicious French trimmed rack of lamb roasted in the oven with garlic, tomatoes and aubergines, served with mint oil

How it's doneDirections

Step 1

set the oven to 190C 375F or gas mark 5 wash and half the tomatoes add to the roasting tin

Step 2

Peel the garlic add to the roasting tin

Step 3

cut the aubergines into 2 cms thick slices cook the aubergine slices in batches in the frying pan turning regularly until golden brown add to the roasting tin. Add the oregano season with salt and pepper

Step 4

Heat the frying pan brown the lamb till golden browm
add to the roasting tin place in the oven cook for 30 mins

Step 5

while the lamb is cooking, make the sauce. place the mint salt and sugar into a blender blend till smooth add the vinegar and oil

Step 6

Remove the lamb from the oven rest for 5 mins

Step 7

Cut the rack into chops,  add the vegetables serve with the sauce

  • 1 handful of fresh mint
  • 2 tbsp red wine vinegar
  • 1 pinch of caster sugar
  • 1 pinch of salt
  • 6 tbsp olive oil
