Chinese Pineapple Fritters with Spiced Toffee Sauce

Light crispy fresh pineapple fritters  served with a toffee sauce flavoured with coconut, and spiced with cinnamon, star anise, ginger and cloves

How it's doneDirections

Step 1

Place the sauce ingredients in a pan, melt the ingredients. When it comes to the boil, turn down the heat cook gently. Cook for 3 minutes stir continually remove from the heat

Step 2

Add the cream to the mixture stir to mix the ingredients set a side

Step 3

Peel and cut the pineapple into rings, cut the rings into halves place on kitchen paper

Step 4

Whisk the egg whites till they form peaks. Mix the flour, salt, water and icing sugar into a paste. Fold the egg white into the batter.

Step 5

Melt the butter in a small pan or microwave, add to the batter set a side

Step 6

Heat about 21/2 inches of frying oil in a pan. Drop a breadcrumb into the oil to check its hot enough it should fizzle. Dip the pineapple in the batter and place in the oil. Cook in batches and keep warm in the oven cook till golden brown Drain on kitchen paper

Step 7

Place the fritters in a bowl, place the toffee dipping sauce in a bowl serve immediately

  • 5 tbsp water
  • 2 tsp butter
  • 1 egg white
  • 100 grams butter
  • 50 grams brown sugar
  • 2 tbsp coconut cream
  • 1/2 tsp ginger
  • 1/2 tsp cinnamon
  • 1 star anise
  • 1/4 ground cloves
  • 2 tbsp double cream
  • q pinch black pepper
  • 1 pinch salt
  • sunflower oil for frying
