Chicken Tagine with Tomatoes & Honey

Chicken Tagine – a traditional Moroccan stew, with subtle mixture of mild sweet spices and honey combines beautifully with fresh sharply flavoured lemon couscous

How it's doneDirections

Step 1

Set the oven to 180°C, 350°F or gas mark 4.

Step 2

Collect together the ingredients

Step 3

Half fill a large pan with water and boil

a. Prick tomatoes and place in the boiling water for 5 minutes

Step 4

Heat the olive oil in the frying pan

a. Place the chicken in the frying pan and cook till the chicken is golden brown.

Step 5

While the chicken is cooking peel and chop the onion(s) finely

Step 6

Drain the tomatoes and place in cold water.

Step 7

Remove the chicken from the frying pan and place it in an ovenproof dish.

a. Add the onioned to the frying pan and cook until soft.

Step 8

While the onions are cooking remove the skins from the tomatoes.

a. Chop the tomatoes and remove any hard central parts of the tomatoes.

b. Add the cinnamon, turmeric and ginger to the onions and cook for 1-2minutes on a low heat.

c. Add the chopped tomatoes to the frying pan, cook for 5 minutes.

d. Taste and season with salt and pepper if necessary.

e. Add the tomato mixture to the chicken, cook in the oven for 25 minutes.

Step 9

10 minutes before the chicken is ready, empty the couscous into a bowl and follow the instructions on the packet.

Step 10

5 minutes before the chicken is ready, remove it from the oven and add the 2 teaspoons of honey. Return this to the oven and cook for a further 5 minutes.

Step 11

Remove the chicken from the oven. Check the chicken is cooked by piercing the chicken and checking the juices run clear.

Serve the chicken and couscous with a sprinkle of fresh chopped coriander and a couple of slices of lemon

Chicken
  • 500 grams Chicken Thighs and Legs
  • 350 grams Tomatoes
  • 1 Onion
  • 1/2 tsp Ground Ginger
  • 1/2 tsp Turmeric
  • 1 tsp Honey
  • 2 tbsp Olive Oil
  • Salt - to taste
  • Black Pepper - to taste
Couscous
  • 1 packet Lemon and Coriander Couscous
  • 1/2 a Lemon
  • 1 handful Fresh coriander
