Easy veggie dinners ideas organised into a simple meal plan, for those busy warm summer nights, 

Monday's Meal

Spaghetti with pureed tomatoes, spaghetti pasta with fresh tomatoes and red pepper flavoured with mint, basil and garlic, and served with crunchy garlic bread. 

Tuesday's Meal

Black bean quesadilla, black bean with sliced red pepper, red onions, garlic and jalapenos, packed into a tortilla with mozzarella cheese and browned in a frying pan, the quesadilla is served with a Mexican salad of  avocado, sweetcorn, cherry tomato, spring onions and lettuce with a garlic, coriander, honey and lime dressing .

Wednesday's Meal

Southern fried cauliflower with slaw, cauliflower marinated in milk, mustard, lemon and paprika, and covered in a crunchy coating of chilli, oregano, sage, thyme, garlic, ginger, mustard and paprika, and baked in the oven. The cauliflower is served with a slaw of red cabbage, celery, onions, apples, pears, peanuts and jalapenos, in a lemon and lime dressing. The cauliflower is served in a chipotle cream

Thursday's Meal

Creamy feta and courgette fritters with a balsamic and mint vinaigrette, served with a rice salad with aubergine and  pistachio coated in a lemon & caper dressing.

Friday's Meal

A crisp puff pastry tart topped with soft new potato and fresh asparagus, goats cheese and a sprinkle of rosemary The tart is served with green salad and mustard dressing.
