A black bean, red onion and red pepper filling flavoured with garlic and jalapenos encased in a flour tortilla wrap with gooey mozzarella. The quesadilla is griddled till golden brown and served with a Mexican salad of lettuce, cherry tomatoes, spring onions, avocado and sweetcorn, with a lime, coriander, garlic and honey dressing.
Quesadillas are a Mexican dish of traditional corn tortilla wraps stuffed with cheese, vegetables and meats and spices, the tortilla is folded over and then shallow fried or griddled till golden brown. European and American quesadillas tend to be made with flour tortilla wraps.
The combination of black beans and red peppers marry perfectly with the mozzarella cheese and jalapenos, but what our recipe special is the addition of a delicious Mexican salad with lime and coriander dressing making the perfect evening meal.
Quesadillas are ideal for a Friday night dinner and perfect for kids as you can easily leave out the jalapenos and add them at the end for the adults. This meal is quick to cook and is perfect for your evening meal on a busy work night too!
