The origins of this dish comes from a traditional Italian country salad, we have combined it with a light pastry base to make a delicious vegetarian tart. The combination of goats cheese and asparagus goes perfectly together and the addition of new potatoes. What makes this dish extra special is the sprinkle of rosemary.
This dish is delicious in the spring and summer when asparagus is at its best, it can be served with a simple green salad or a delicious coleslaw. It is ideal for a quick work night dinner
These tarts are perfect for adults and children, they are also suitable for vegetarians that eat dairy. If you make the tarts in spring when new potatoes and asparagus are in season this dish can be quite cost effective.

The crisp puff pastry adds a buttery crunch to the dish, that compliments the potatoes beautifully, the asparagus add a freshness as does the rosemary, the goats cheese provides a delicious creamy texture and gives the tart its strong taste.

puff pastry - Puff pastry has a delicious buttery we use frozen puff pastry as it is time consuming to make from scratch and the quality of most puff pastries you can by in the shops is really good.
new potatoes - this dish really needs new potatoes rather than regular potatoes our favourites are charlotte potatoes but to be fair this recipe taste great with any new potatoes
asparagus - asparagus is readily available in the supermarkets, it can be expensive out of season but in season it is usually very cost effective.
goats cheese - you can use any goats cheese but we use the goats cheese log for this recipe as it has a delicious taste and slices and melts well for a dish like this.
