Delicious cauliflower florets marinated in lemon paprika and mustard and then coated in a southern spice and herb crust, baked in the oven till crisp and golden, served with a fruity coleslaw and a chipotle mayo
Make the dip by mixing the sour cream, mayo and chipotle paste together and cover and set aside. Marinate the cauliflower in lemon, milk, paprika and mustard, then coated in a chilli, oregano, sage, thyme, garlic, ginger, mustard, and paprika crust. Oven-bake the fritters till the crust is crisp and the cauliflower is soft. Cut the red cabbage, apple and pear into slices and mix together with the peanuts to make the coleslaw. Dress the coleslaw with a simple dressing of lemon, lime, olive oil and seasoning.
