Southern Fried Cauliflower with Slaw & Chipotle Cream Recipe

Cauliflower florets, flavoured with paprika and mustard coated in a herb and spice crust, served with red cabbage, apple, pear and peanut coleslaw and a smoky hot pepper dressing

Recipe Ingreds


  • 1 head cauliflower
  • 2 tbsp olive oil


  • 0.25 tsp black pepper
  • 0.5 tsp chilli powder
  • 0.5 tbsp oregano (dried)
  • 1 tbsp sage (dried)
  • 1 tsp thyme (dried)
  • 1 cloves garlic
  • 0.5 tbsp ground ginger
  • 0.5 tbsp mustard powder
  • 0.5 tbsp paprika
  • 50 grams plain flour
  • 0.5 tsp salt


  • 1 apples
  • 1 stick celery
  • 8 sprig fresh coriander
  • 2 tbsp sliced jalapenos
  • 1 pears
  • 150 grams red cabbage
  • 1 red onions
  • 25 grams salted peanuts


  • black pepper (to taste)
  • 2 tsp fresh lemon juice
  • 0.5 lime
  • 2 tbsp olive oil
  • salt (to taste)


  • 1 tsp chipotle paste
  • 3 tbsp mayonnaise light
  • 100 ml sour cream


  • 1 tsp black pepper
  • 1 tsp fresh lemon juice
  • 125 ml milk
  • 1 tbsp mustard
  • 1 tsp paprika
  • salt (to taste)

Step 1

  • squeeze the lemon(s) .
  • mix the marinade ingredients together in the rectangular pie dish

Step 2

  • cut the cauliflower into florets
  • place the cauliflower
  • in the marinade
  • refrigerate for at least two hours preferably overnight

Step 3

  • remove the cauliflower from the fridge
  • set the oven to 180C 350F or gas mark 4

Step 4

  • peel and crush the garlic using the garlic crusher or chop finely
  • mix the coating ingredients together in a bowl apart from the sunflower oil

Step 5

  • dip the cauliflower florets into the coating
  • place the cauliflower on the baking tray
  • brush or spray lightly with oil
  • cook for 15 mins

Step 6

  • squeeze the lemon(s) .
  • squeeze the lime(s)
  • mix the dressing ingredients together in a bowl

Step 7

  • wash and shred the red cabbage
  • peel and core the apples
  • chop into matchsticks
  • peel and core the pears
  • chop into matchsticks

Step 8

  • slice the red onions thinly
  • wash and dice the celery
  • slice the jalapeno

Step 9

  • wash and finely chop the fresh coriander
  • place all the salad ingredients in a bowl
  • add the salad dressing
  • toss the salad
  • set a side

Step 10

  • mix the cream ingredients together in a bowl
  • set a side

Step 11

  • place the salad on a plate

Step 12

  • when the cauliflower is cooked
  • remove from the oven
  • add the cauliflower to the serving plate
  • serve with the Chipotle Cream

How to make southern fried cauliflower fritter

Make the dip by mixing the sour cream, mayo and chipotle paste together and cover and set a side. Marinate the cauliflower in lemon, milk, paprika and mustard, then coated in a chilli, oregano, sage, thyme, garlic, ginger, mustard, and paprika crust. Oven bake the fritters till the crust is crisp and the cauliflower is soft. Cut the red cabbage, apple and pear into slices and mix together with the peanuts to make the coleslaw. Dress the coleslaw wit a simple dressing of lemon, lime, olive oil and seasoning.
