Great dinner recipes to inspire your vegetarian meal plan. The first recipe is a crunchy jacket potato with spinach & mushroom cream, oven baked potato laced with creamy butter and topped with a delightful combination of fried mushrooms, onions and spinach with a creamy sauce made with creme fraiche garlic and English mustard served with roasted balsamic and thyme tomatoes. the second recipe is an edamame & veggie stir-fry, edamame beans stir fried with a selection of oriental vegetables in a honey, garlic, ginger, Teriyaki and soy sauce. The final recipe is vegetable fajitas, sliced bell peppers, red onions, courgettes and mushrooms spiced with garlic and fajita seasoning wrapped in a tortilla wrap with a tomato salsa, with red onions, cucumbers and tomatoes flavoured with chilli and fresh coriander. The veggie fajitas are served with a salad of lettuce, avocado and lime and chipotle cream.
