The first recipe is a light spaghetti pasta made with fresh tomatoes and peppers and flavoured with mint, basil and garlic served with a sprinkle of grated parmesan. Our second dish is a Chinese inspired cashew and vegetable stir fry, cashew nuts, bell peppers, celery, carrots and spring onions tossed in a sauce of garlic, chilli, white wine, soy and black bean sauce, served on a bed of noodles. The final dish in our meal plan is soft warm burrito stuffed with onions, tomatoes and kidney beans, flavoured with chilli flakes, garlic, cumin and coriander , topped with avocado, sour cream and grated cheddar. Our burritos are served with spicy sweet potato chips.
