Finding great veggie meal planning ideas is never easy this plan is packed with quick and easy veggie meals.

Monday's Meal

Crispy butter bean patties made with smashed butter beans, grated carrots, grated parsnips and onions flavoured with parsley, garlic and lemon, served with a fresh tomato and green salad with a basil dressing.

Tuesday's Meal

Chinese inspired cashew and vegetable stir fry, cashew nuts, bell peppers, celery, carrots and spring onions tossed in a sauce of garlic, chilli, white wine, soy and black bean sauce, served on a bed of noodles.

Wednesday's Meal

Soft warm burrito stuffed with kidney beans, onions and tomatoes,  flavoured with coriander chilli flakes, garlic and cumin topped with avocado, grated cheddar and sour cream. Our burritos are served with spicy sweet potato chips. 

Thursday's Meal

Light spaghetti pasta made with fresh tomatoes and peppers and flavoured with mint, basil and garlic served with a sprinkle of grated parmesan.

Friday's Meal

Grilled aubergines on a bed of watercress with a salad of rice, chilli, red peppers, lemon, parsley and feta and a dollop of tzatziki
