Cheese and Bean Burritos with Avocado Recipe

Delicious vegetarian kidney bean and cheese burritos with crushed red beans, tomatoes and cumin, topped with creamy coriander and lime avocado, sour cream and grated cheddar cheese all encased in a soft burrito wrap. The burritos are served with crispy sweet potato chips flavoured in smoked paprika and garlic and a simple green salad.

Recipe Ingreds


  • 1 avocado
  • black pepper (to taste)
  • 40 grams cheddar cheese
  • 12 sprig fresh coriander
  • 2 cloves garlic
  • 1 tsp ground cumin
  • 1 tin tinned kidney beans
  • 1 lime
  • 1 tbsp olive oil
  • salt (to taste)
  • 2 tomatoes
  • 4 wraps
  • 0.5 onions
  • 0.5 tsp chilli flakes
  • 120 ml sour cream


  • 1 tsp black pepper
  • 0.5 tsp garlic salt
  • 1.5 tbsp olive oil
  • 1 tsp smoked paprika
  • 3 sweet potato


  • 0.5 cucumber
  • 40 grams Salad leaves
  • 0.5 bell pepper (yellow)

Step 1

  • set the oven to 190C 375F or gas mark 5
  • peel sweet potatoes , cut into chips
  • combine the paprika, garlic salt and black pepper in a bowl
  • add the chips and oil to the bowl of spices toss the chips ensuring each chip is fully coated with the mixture place the chips on a baking tray
  • place in the oven
  • cook for 20 mins

Step 2

  • heat the olive oil in the frying pan
  • peel and chop the onion(s) finely
  • add to the frying pan

Step 3

  • peel and crush the garlic using the garlic crusher or chop finely
  • add the garlic to the frying pan
  • add cumin and chilli flakes
  • fry for approx 1 minute to bring out the flavour of the spices

Step 4

  • Drain the beans and wash in cold water
  • add to the frying pan
  • Gently squash some of the beans with a fork

Step 5

  • wash and chop the tomatoes
  • add the chopped tomatoes to the frying pan
  • cook for a minute or two
  • taste and season with salt and pepper if necessary
  • set a side

Step 6

  • cut the avocado(s) in half remove the stone and skin, slice lengthways into thin slices
  • add to a small bowl
  • mash with a fork

Step 7

  • wash and finely chop the fresh coriander
  • add to the avocado

Step 8

  • squeeze the lime(s)
  • add the lime juice to the avocado

Step 9

  • season with salt and pepper

Step 10

  • wash mixed leaves and place in a serving bowl.
  • place a cross on the top of the cucumber
  • then slice the cucumber to form quarters
  • sprinkle over the salad leaves
  • wash and chop the yellow pepper(s) into small pieces
  • sprinkle over the salad leaves

Step 11

  • warm the wraps in the microwave for 30 seconds or cover the wraps in foil and place in the oven for 5 mins till warm
  • grate the cheese

Step 12

  • to make the burrito spread a little sour cream over the wrap

Step 13

  • then pile the beans and avocado and cheddar cheese in the middle of the wrap . Bring the bottom up
  • then fold the side in to make a cup like object

Step 14

  • remove sweet potato chips from the oven

  • serve two wraps for each person
  • serve with the sweet potato chips
  • add the salad

  • 1 small bowl

How to make cheese and bean burritos with sweet potato chips

To make the sweet potato chips, peel and chop the potatoes into chips, add the chips to a bowl with some oil, smoked paprika, garlic salt and black pepper. Toss the chips and then spread then on a roasting tray and pop in the oven, cook for about 20 minutes. While the chips are cooking make the fillings for the burritos, lightly fry the onions and garlic till soft, add the drained kidney beans and crush with a fork add the tomatoes and cumin to the beans to create the burrito sauce cook till the sauce thickens. While the bean mixture is cooking prep the avocados, peel and mash the avocados with the lime and fresh chopped coriander. To create the burrito add the kidney bean mixture, then the mashed avocado, then grated cheddar cheese and finish with a dollop of sour cream, fold into a burrito and serve with  the sweet potato chips

Burritos are a traditional Mexican dish often eaten by hand, they consisting of warm flour tortilla stuffed with a meat traditionally chicken, beef or pork, with a medley of rice or cooked beans, vegetables, cheese and a choice of sauces.

These are perfect for a quick weekend dinner and are guaranteed to be a hit with all the family, we like to eat them the healthy way , but if you like your burritos crispy, then fill the tortilla with the bean and tomato mixture and the grated cheese fold in the ends and roll tightly.
