This easy aubergine recipe was inspired by a chicken recipe by Katie and Ginnearlo Caldesi in their book Around the World Salads. Aubergines are a delicious meat substitute, the aubergines are cut into large slices to form "aubergine steaks".
The aubergine are grilled and flavoured with balsamic vinegar, oregano and chilli flakes. The "aubergine steaks" are served with a fresh rice, feta and red pepper salad flavoured with chilli, oregano, parsley, garlic and lemons .
