Mondays Meal

our first meal is southern fried chicken with slaw & chipotle cream,  Chicken marinated in milk, mustard, lemon and paprika, and covered in a crispy coating of chilli, oregano, sage, thyme, garlic, mustard, ginger and paprika. The chicken is oven baked and served with a slaw of apples, pears, cabbage, red onions, spring onions and celery, dressed in a lime and lemon dressing. The chicken and coleslaw is served with a chipotle cream. 

Tuesdays Meal

Chinese duck salad with watermelon & cashews, duck pan fried with a crispy skin, and basted in hoisin sauce sliced and served on a bed of  mint, watercress, water melon and roasted five spice cashew nuts. The salad is flavoured with lime and chilli.

Wednesdays Meal

Greek lemon & herb chicken with tzatziki & salad.  chicken breasts stuffed with a mixture of feta, basil, parsley, garlic, lemon and sun dried tomatoes, the chicken is pan fried sliced and served on a bed of tomato and green salad with an oregano dressing.

Thursdays Meal

Thai steak salad, griddled steak served on a bed of simple lettuce and herbs, coated in a spicy Thai beef dressing made with chilli, ginger, garlic, fish sauce, honey and lime. 

Fridays Meal

A spicy chorizo and potato salad, hot peppery chorizo with sliced new potatoes, red onions and chickpeas sat on a bed of spinach. The salad is lightly coated in a tomato dressing and topped with a gooey poached eggs.

How can I make a salad more interesting
  • Make your dressing more interesting, add different herbs, swap out the acidity element for different acids i.e lime, flavoured vinegars. Try different oils. Play with hot and cooling flavours such as chilli and yoghurt
  • Add different textures, nuts and seeds are a great addition to salads, they add flavour and crunch, for extra punch toast the nuts and seeds, and for extra flavour add some spice mix to your nuts
  • Add different ingredients, try adding root vegetables but change the taste and texture by roasting the veg for taste and grating the veg for texture. When roasting veg add extra herbs and spices to the vegetables.
  • Add different flavours add a touch of sweetness using tried fruits , or a smoky flavour using smoked bacon or cheese
  • For creamy dressings add some punch use different ready made pastes ie chipotle paste, harissa paste, nasi goreng paste, or simply add some pesto check the labels to make sure the pastes can be used without cooking. 
  • Mix your salad with fruit and vegetables.
