Coat the cashews in five spice and roast, cut the watermelon into cubes. Fry the duck skin side down first, cook till golden brown and the skin is crisp add the Chinese five spice and hoisin sauce. Flavour the watermelon with chilli and lime, Make the salad by mixing the watercress, mint and cashew nuts. To serve place the salad on the plate add the watermelon and finally slice the duck and place on top. This salad is great for a delicious summer salad
