These vibrant veggie courgette wraps are a delicious medley of simple ingredients perfect for a light lunch or dinner. The wraps are packed with zucchini slices coated in crispy bread crumbs, creamy avocado, and juicy cherry tomatoes, all drizzled with a tangy cheese mayonnaise dressing. Paired with perfectly seasoned sweet potato chips.
Cut the courgettes thickly longwise and coated in Italian herb-flavoured breadcrumbs place in the oven on a prepared baking sheet, and baked till golden brown. Roast the cherry tomatoes in a little oil and the dried herbs. Once cooked place a couple of the zucchini fritters in a soft tortilla with the sweet roasted cherry tomatoes and slices of creamy avocado, top with the savoury mayonnaise.
