Summer Fruit Crumble Recipe

A summer fruit crumble with fresh raspberries and peaches cooked in apple juice, brown sugar and cinnamon topped with a crumble of flour, rolled oat, ground ginger and brown sugar. This delicious fruit crumble is served with a scoop of .soft vanilla ice-cream.

Recipe Ingreds

Crumble

  • 70 grams butter
  • 100 grams plain flour
  • 70 grams rolled oats
  • salt (to taste)
  • 60 grams brown sugar
  • 0.5 tsp ground ginger

Fruit

  • 100 ml apple juice
  • 15 grams corn flour
  • 0.5 whole lemon
  • 50 grams brown sugar
  • 3 whole peaches
  • 150 grams raspberries
  • 0.5 tsp cinnamon

Icecream

  • 4 scoop icecream(vanilla)

Recipe with pictures Steps

Step 1

  • sieve the flour, salt and the ginger in to a bowl
  • add the oats
  • add the brown sugar
  • mix together

Step 2

  • melt the butter
  • add the butter to the dry ingredients
  • mix together
  • set a side

Step 4

  • wash the raspberries
  • peel and slice the peaches
  • add the peaches only to the pan

Step 5

  • squeeze the lemon(s) .
  • add to the pan
  • add the sugar to the pan

Step 6

  • add the apple juice to the pan
  • add the cinnamon
  • Bring to the boil and simmer
  • cook until the peaches are tender
  • add the raspberries
  • cook for 5 minutes

Step 7

  • dissolve the cornflour in a couple tbsps of water
  • add the cornflour to the pan
  • stir for a minute or two until thickened
  • set a side

Step 8

  • butter the ramekin dishes
  • add the fruit mixture to the dish
  • spread the crumble over the fruit mixture
  • bake for 20 mins
  • remove from the oven
  • rest for 5 mins

Step 10

  • serve with vanilla icecream

How to make summer fruit crumble with oats

A delicious peach and raspberry oat crumble, these fresh summer fruits are gently stewed and topped with a crunch crumble topping, this easy pudding tastes amazing and makes the perfect pudding to serve with ice cream To make our crumble gently stew the raspberries and peaches in apple juice and cinnamon once cooked place in an oven proof dish and set aside. Yes, you can freeze this delicious dessert, we recommend freezing the fruit mixture separately from the crumble, placing the fruit mixture into a freezable container and leaving it to cool and then freezing. Place the crumb in a plastic bag and freeze. Defrost the fruit and crumble, place the fruit in the bottom of an oven-proof dish and top with the crumble, follow the recipe for cooking instructions.
