Strawberry oat crumble with rhubarb served with a scoop of vanilla ice-cream.

Strawberry & Rhubarb Crumble Recipe

A fresh strawberry crumble with a delicious filling of fresh strawberries and rhubarb cooked in brown sugar and apple juice and topped with a crumble of rolled oat, brown sugar and ginger. This delicious crumble is best served with a scoop of ice-cold vanilla ice cream. 

Recipe Ingreds

Crumble

  • 120 grams butter
  • 1 tsp ground ginger
  • 200 grams plain flour
  • 140 grams rolled oats
  • salt (to taste)
  • 120 grams brown sugar

Fruit

  • 250 ml apple juice
  • 20 grams corn flour
  • 1 whole lemon
  • 200 grams rhubarb
  • 600 grams strawberries
  • 200 grams brown sugar

Icecream

  • 6 scoop icecream(vanilla)

Step 1

  • sieve the flour, salt and the ginger in to a bowl
  • add the oats to the bowl
  • add the brown sugar to the bowl and mix

Step 2

  • melt the butter
  • add the butter to the dry ingredients mix together set a side

Step 3

  • wash the strawberries
  • dry the strawberries
  • hull the strawberries
  • cut the strawberries into slices and add to a pan

Step 4

  • wash the rhubarb
  • cut the rhubarb into slices
  • add the rhubarb to the strawberries

Step 5

  • zest the lemon(s)
  • squeeze the lemon(s) .
  • add the lemon juice, lemon zest and sugar to the strawberries

Step 6

  • add the apple juice to the strawberries
  • Bring to the boil and simmer for 10 minutes or until the rhubarb is tender

Step 7

  • dissolve the cornflour in a couple tbsps of water
  • add the cornflour to the strawberry mixture, stir for a minute or two until thickened set a side

Step 8

  • Butter the oven proof dish
  • add the fruit mixture to the dish
  • spread the oat crumble topping over the strawberry and rhubarb mixture
  • bake for 35 mins
  • remove from the oven
  • rest for 5 mins

Step 9

  • place a serving in a bowl

Step 10

  • serve with vanilla icecream

How to make strawberry crumble with rhubarb

To make the oat crumble, mix together the flour, oats, ginger, sugar and salt. Melt the butter and add to the bowl set aside. To make the crumble filling, wash and slice the strawberries and rhubarb place in a pan with the lemon juice and zest and apple juice cook till the rhubarb is soft.  Dissolve the cornflour in a little water and stir into the strawberry and rhubarb mix stir till thickened. Place the filling into a casserole dish and add the crumble topping bake till golden brown.
