To make the oat crumble, mix together the flour, oats, ginger, sugar and salt. Melt the butter and add to the bowl set aside. To make the crumble filling, wash and slice the strawberries and rhubarb place in a pan with the lemon juice and zest and apple juice cook till the rhubarb is soft. Dissolve the cornflour in a little water and stir into the strawberry and rhubarb mix stir till thickened. Place the filling into a casserole dish and add the crumble topping bake till golden brown.
The combination of strawberry and rhubarb makes the perfect crumble filling, what makes this crumble filling the best is that the fruit is cooked in fresh apple and lemon juice. The addition of ginger to the oaty crumble topping perfectly compliments the strawberry filling
This crumble is perfect all year round, we make extra filling when the ingredients are cheap to buy and store it in the freezer, so we can have the delicious taste of summer in the middle of winter. In the spring and summer, we serve the crumble with vanilla ice cream, and in the winter serve it with creamy custard.
This is the perfect dessert for any dinner party as it is so simple to cook, kids and adults love this dessert so it also makes the ideal pudding for a family get-together. This dessert will go well as a Sunday dinner dessert.
