Strawberry Mille Feuille Gateau Recipe

Serves: 6
Delicious layers of crispy puff pastry,  lightly whipped doubled cream and fresh sliced strawberries layered to form a sweet light gateau topped with slices of strawberries glazed with red currant jelly. Perfect for a quick dessert for a dinner party

Recipe Ingreds

Pastry

  • 350 grams puff pastry
  • 15 grams plain flour

Cake

  • 300 ml double cream
  • 2 tsp fresh lemon juice
  • 6 tbsp redcurrant jelly
  • 350 grams strawberries

Recipe with pictures Steps

Step 1

  • remove the pastry from the freezer

Step 2

  • lightly dust a clean work surface with flour
  • roll out the pastry into a rectangle 3 mm thick
  • cut the pastry into 3 rectangles
  • place on a baking tray
  • prick the pastry
  • cover with cling film
  • rest for 20 mins in the fridge

Step 3

  • set the oven to 200C 400F or gas mark 6
  • remove the cling film
  • cover with greaseproof paper
  • place a baking tray on to the top of the pastry
  • place in the oven
  • bake for 20 mins

Step 4

  • remove the pastry from the oven
  • remove the top baking tray
  • remove the paper
  • return to the oven
  • cook for 5 minutes
  • remove from the oven
  • set a side to cool

Step 5

  • while the pastry is cooking
  • add the cream to a bowl
  • whip the cream to form soft peaks
  • place the cream in a piping bag
  • set a side

Step 6

  • squeeze the lemon(s) .
  • melt the redcurrant jelly in a pan with the lemon juice cook till it slightly thickens

Step 7

  • wash the strawberries
  • dry the strawberries
  • hull the strawberries
  • cut the strawberries into slices

Step 8

  • place a layer of pastry on a serving plate
  • pipe on the cream
  • place the strawberry slices on top of the cream
  • glaze the strawberries with the jelly
  • Repeat the layers
  • ending with a pastry layer

Step 9

  • neatly place a layer of strawberries over the pastry
  • glaze the strawberries with the jelly

Step 10

  • slice the gateau
  • place on a plate

  • 1 grease proof paper
  • 1 hand mixer
  • 1 large knife
  • 1 lemon squeezer
  • 1 medium bowl
  • 1 piping bag
  • 1 rolling pin
  • 1 sieve
  • 1 small pan
  • 1 tea towel

About our strawberry mille feuille gateau recipe

Mille-feuille is french for thousands of sheets, it has been recorded in recipe books since the 16th century . A mille-feuille has 3 layers of pastry , two layers of pastry cream and is dusted with icing sugar or fondant.  There are numerous versions of mille-feuille  in different cultures, the most common is the vanilla or custard slice. 

Our Mille=feuille is a simple gateau of puffed pastry sliced into oblong shapes and baked in the oven till golden brown. When the pastry is cool, whip the cream and pipe on top of the pastry. Slice the fresh strawberries and place on top of the whipped cream, and glaze the strawberries with a little red currant jelly, add the next layer of pastry and repeat. Add the final layer of pastry and place the sliced strawberries on top, glaze generously with red current jelly. This recipe is perfect for a casual dinner party
