Mille-feuille is french for thousands of sheets, it has been recorded in recipe books since the 16th century . A mille-feuille has 3 layers of pastry , two layers of pastry cream and is dusted with icing sugar or fondant. There are numerous versions of mille-feuille in different cultures, the most common is the vanilla or custard slice.
Our Mille=feuille is a simple gateau of puffed pastry sliced into oblong shapes and baked in the oven till golden brown. When the pastry is cool, whip the cream and pipe on top of the pastry. Slice the fresh strawberries and place on top of the whipped cream, and glaze the strawberries with a little red currant jelly, add the next layer of pastry and repeat. Add the final layer of pastry and place the sliced strawberries on top, glaze generously with red current jelly. This recipe is perfect for a casual dinner party
