Crispy Chilli Mushrooms with egg noodles Recipe

Crispy Chinese chilli mushrooms, marinate mushrooms coated in crispy cornflour and stir fried in a chilli, soy sauce, garlic, ginger and tomato sauce, served with noodles dressed in sesame, lime, chilli and soy sauce. The perfect veggie alternative to crispy chilli beef.

Recipe Ingreds

Crispy chilli mushrooms

  • black pepper (to taste)
  • 200 grams corn flour
  • 1 fresh chilli
  • 7 sprig fresh coriander
  • 2 cm fresh ginger
  • 2 cloves garlic
  • 200 grams mushrooms
  • salt (to taste)
  • 1 sunflower oils (for frying)

Marinade

  • 1 egg
  • 2 tsp sesame oil
  • 2 tbsp soy sauce
  • 5 grams caster sugar
  • 0.25 tsp chilli flakes

Sauce

  • 4 tbsp honey
  • 6 tbsp rice vinegar
  • 0.5 tbsp soy sauce
  • 3 tbsp tomato sauce

Dressing

  • 0.25 tsp chilli flakes
  • 0.5 lime
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • caster sugar (to taste)
  • 2 tsp sunflower oil

Noodles

  • 120 grams egg noodles

How to make chilli mushrooms with noodles

  • wash the mushrooms and cut in half

Step 2

  • Make the marinade
  • mix the marinade ingredients together in a bowl
  • coat the mushrooms in the marinade

Step 3

  • season the cornflour with salt and pepper add the mushrooms and coat in the flour
  • heat about 21/2 cms of frying oil in a frying pan

Step 4

  • Drop a breadcrumb into the oil to check its hot enough it should fizzle
  • fry the mushrooms till golden brown
  • place on kitchen paper
  • set a side and keep warm

Step 5

  • wash and finely chop the fresh coriander
  • peel and grate the ginger
  • peel and crush the garlic using the garlic crusher or chop finely
  • wash and finely chop the chilli

Step 6

  • squeeze the lime(s)
  • mix the dressing ingredients together in a bowl

Step 7

  • half fill a pan with water and boil
  • add a spot of olive oil and a pinch of salt to the boiling water
  • Add the noodles to the hot water
  • cook till soft

Step 8

  • place the sauce ingredients in a bowl
  • mix the ingredients
  • set a side

Step 9

  • Heat the wok add a spot of oil
  • add the garlic, chilli and ginger to the wok and stir fry for 30 seconds
  • add the sauce mixture to the wok
  • Bring to the boil
  • add the crispy mushrooms, coat in the sauce

Step 10

  • drain the noodles and wash, place back into the pan and warm through on a low light
  • add the dressing
  • place the noodles in individual serving dishes

Step 11

  • add the crispy chilli mushrooms
  • sprinkle with coriander
