Chinese Stir-Fry Peppered Chicken Recipe

A delicious stir fry with strips of chicken breast marinaded in five spice, soy and sesame oil, stir fried with onions, red peppers, spring onions and cashew nuts, finished with a Szechuan pepper, chilli, hoisin, wine and soy stir fry sauce.  Serve this deliciously spicy stir fry on a bed of egg noodles


Recipe Ingreds

Stirfry

  • 1 bell pepper (red)
  • 2 tsp black pepper corns
  • 100 grams cashew nuts
  • 2 tsp chilli paste
  • 120 grams egg noodles
  • 1 fresh chilli
  • 2 cloves garlic
  • 2 tbsp hoisin sauce
  • 0.5 onions
  • 2 tbsp soy sauce
  • 1 spring onions
  • 45 ml white wine
  • 1 tbsp sunflower oil

Chicken Marinated

  • 2 chicken breasts
  • 0.5 tsp chinese five spice
  • 5 grams corn flour
  • 1 tsp sesame oil
  • 1 tsp granulated sugar
  • 2 tbsp soy sauce
  • 1 tbsp sunflower oil

step 1

  • place the sunflower oil, sesame oil, sugar, chinese five spice, soy sauce, corn flour into the shallow dish

step 2

  • slice the chicken fillets into small strips or goujons
  • place the chicken in the marinade
  • cover with cling film
  • refrigerate for at least two hours preferably overnight

Step 3

  • Take the chicken out of the fridge

Step 4

  • peel the onion cut in half
  • cut each half into thin slices

Step 5

  • wash and chop the red pepper into matchsticks

Step 6

  • wash and finely chop the chilli

Step 7

  • peel and chop the garlic

Step 8

  • wash and finely slice the spring onions

Step 9

  • crush the pepper corns in a mortar and pestle

Step 10

  • mix the chilli paste, hoisin sauce, soy sauce and white wine in a bowl

Step 11

  • half fill a medium pan with water and boil
  • add a spot of olive oil and a pinch of salt to the boiling water

Step 12

  • Add the noodles to the hot water

Step 13

  • Heat 1/2 the oil to the wok
  • add the onions
  • add the peppers
  • cook for a minute or two

Step 14

  • move the veg to the side of the wok and add the other 1/2 of the oil to the wok
  • Add the chicken to the frying pan and fry from 4 to 5 minutes until golden brown

Step 15

  • Add crushed pepper
  • add the garlic and chopped chilli
  • to the wok
  • cook for a minute or two

Step 16

  • add the sauce
  • to the wok
  • cook for a minute or two

Step 17

  • drain the noodles and wash, place back into the pan and warm through on a low light

Step 18

  • add the cashew nuts to the wok
  • cook for a minute or two

Step 20

  • place the noodles in individual serving dishes
  • place the stir fry on top
  • sprinkle with spring onions
