Butternut Crème Fraiche Pasta Recipe

This deliciously healthy spicy butternut squash pasta is the perfect quick dinner idea. Soft pasta mixed with toasted herb coated walnuts, fried onions. wilted spinach and roasted butternut squash all enveloped in a creamy creme fraiche sauce flavoured with parmesan and chilli 

Recipe Ingreds

Bread

  • 1 stick garlic bread

Pasta

  • black pepper (to taste)
  • 1 whole butternut squash
  • 1 tsp chilli flakes
  • 150 ml crème fraiche
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 30 grams parmesan or pecorino cheese
  • salt (to taste)
  • 120 grams tagliatelle
  • 1 whole onions
  • 150 grams Spinach

Walnut

  • 75 grams walnuts
  • 10 grams butter
  • 1 tsp Italian herbs
  • 1 tsp Onion salt
  • black pepper (to taste)

How to make spicy butternut pasta with creme fraiche pasta sauce

  • set the oven to 190C 375F or gas mark 5
  • peel and chop the butternut squash into cube
  • add the butternut squash cubes to the Baking tray and coat the cubes in oil
  • cook for 10 mins

Step 2

  • half fill a medium pan with water and boil
  • add the pasta to the boiling water and cook until tender but with a slight bite

Step 3

  • melt the butter in the frying pan with a spot of oil
  • roughly chop the walnuts and add to the pan
  • Add the herbs, onion salt and season with pepper
  • cook till golden brown
  • remove from the frying pan and set a side

Step 4

  • remove the butternut from the oven
  • Add the chilli flakes to the baking tray
  • season with salt and pepper
  • return the butternut to the oven, cook till soft and golden brown
  • set a side to cool a little

Step 5

  • heat the oil in the frying pan
  • peel and slice the onions
  • add the onions and cook till soft
  • peel and crush the garlic and add to the frying pan

Step 6

  • put the garlic bread on the baking tray and place in the oven follow cooking instructions on packaging

Step 7

  • remove the stalks from the spinach
  • add the spinach to the frying pan
  • cook till the spinach has wilted
  • add the butternut squash to the frying pan
  • add the creme fraiche to the frying pan
  • cook for a minute or two
  • grate the parmesan
  • add to the frying pan

Step 8

  • drain the pasta add to the butternut mixture
  • return to the heat and gently warm through
  • add the walnuts to the pan
  • cook for 3 to 4 mins

Step 9

  • place the pasta on a serving plate

Step 10

  • remove garlic bread from the oven
  • serve the garlic bread with the pasta

Onions - white or brown onions are great for this dish, other types of onions are too sweet

Butternut squash - You could potentially use other types of squash but we prefer butternut , it needs to be roasted to get the perfect flavour

creme fraiche - the creme fraiche gives the perfect tangy verses creamy combination to go with the other ingredients

Spices - the dish is spiced with chilli flakes for heat and  garlic for extra savoury flavours, with Italian herbs for extra freshness
