Butter Bean Patties with Dauphinoise Potatoes Recipe

Veggie butter bean patties made with butter beans, grated carrots and parsnips, flavoured with lemon and parsley and served with creamy sliced potato, onions and cream with a crisp cheese topping, fresh green broccoli and a redcurrant sauce

Recipe Ingreds

  • 1 tin tinned butter beans
  • 1 whole carrots
  • 3 sprig fresh parsley
  • 2 cloves garlic
  • 0.5 whole lemon
  • 1 whole onions
  • 1 whole parsnips
  • salt (to taste)
  • black pepper (to taste)
  • 2 tbsp sunflower oil

Potatoes

  • black pepper (to taste)
  • 50 grams cheddar cheese
  • 175 ml double cream
  • 0.5 tbsp olive oil
  • 1 whole onions
  • 500 grams potatoes
  • salt (to taste)

Veg

  • 350 grams broccoli

Sauce

  • 2 sprig fresh rosemary
  • 2 cloves garlic
  • 100 ml Chianti red wine
  • 2 tbsp redcurrant jelly

Recipe with pictures Steps

Step 1

  • peel and thinly slice the potatoes
  • peel and finely slice the onion(s)

Step 2

  • grease the oven proof dish with the olive oil
  • add a layer of potatoes
  • then a layer of onions
  • season with salt and pepper
  • Repeat layers ending with a potato layer

Step 3

  • set the oven to 180C 350F or gas mark 4
  • pour the cream over the potatoes
  • cover with cling film
  • place in the microwave
  • cook for 10 mins

Step 4

  • grate the cheese
  • sprinkle the cheese over the potatoes
  • place in the oven
  • cook for 15 mins to 20 mins

Step 5

  • make the patties
  • peel and chop the onion(s) finely
  • peel and grate the carrots
  • peel and grate the parsnips

Step 6

  • heat 1/3 of the oil to the frying pan
  • add the onions to the frying pan
  • cook for a minute or two
  • peel and crush the garlic using the garlic crusher or chop finely add to the onions
  • cook for a minute or two

Step 7

  • add the carrots and parsnips to the onions
  • cook for 5 minutes
  • season with salt and pepper
  • add the contents of the frying pan to the bowl
  • stir and leave to cool

Step 8

  • zest the lemon(s)
  • wash and finely chop the fresh parsley
  • add to the bowl

Step 9

  • Drain and rinse the butter beans
  • mash the butter beans with a fork
  • add to the bowl
  • create small patties

Step 11

  • place the jelly in a pan and melt
  • wash and finely chop the fresh rosemary
  • add to the pan
  • peel and crush the garlic using the garlic crusher or chop finely
  • add to the pan
  • add the wine
  • heat the sauce until it thickens
  • stir regularly

Step 10

  • heat the remaining oil in the frying pan
  • add the patties to the frying pan
  • cook for 5 minutes
  • each side

Step 12

  • wash and cut the broccoli into florets
  • place in serving bowl
  • cover with cling film
  • place in the microwave
  • cook for 3 to 4 mins or until the broccoli is tender

Step 13

  • remove the potatoes from the oven
  • place the patties on a plate
  • add a portion of potatoes to the serving plate
  • add the broccoli
  • serve with the sauce

These delicious butter bean patties are the perfectly vegetarian dish to go with dauphinoise potatoes To make the patties lightly fry the garlic, chopped onions, grated carrots and grated parsnips, the vegetables should be cooked till just soft. Mash the tinned butter beans and mix with the fried vegetables, add the parsley and lemon. Form the mixture into patties and shallow fry till golden brown.
