A deliciously rich and creamy celeriac and butter bean soup made with butter beans, onions and peppery celeriac, flavoured with crushed caraway seeds, chopped parsley and grated parmesan served with a crusty white roll
This delicious soup uses butter beans as its base ingredient, these beans are part of the lima bean family and have a rich savoury taste. The texture of the bean is smooth and combined with its rich buttery taste makes it perfect for soup.
To make the soup lightly caramelize and begin to soften the onions and celeriac, add the caraway seeds and lightly cook then add the stock. Cook the soup till the vegetables are soft. Rinse and drain the tinned butter beans add to the soup with the milk. Puree the soup and add the parmesan. Serve the soup with crusty rolls and a sprinkle of chopped parsley.
Celeriac and butter bean make a delicious combination, the sharp peppery flavour of the celeriac acts as the perfect contrast to the butter bean. The parmesan gives the soup a rich creaminess and adds a salty edge to the soup. Finally the subtle aniseed taste of the caraway completes the soup perfectly.

The beans and celeriac make this soup extremely filling with the additional protein from the butter beans and the hit of carbs from the celeriac. The soup is very creamy but without the addition of cream, the butter beans add the rich and creamy taste along with the parmesan cheese. and makes a lovely lunch. For simplicity the butter bean soup uses tinned butter beans you can use dried butter beans but you will need to pre cook them for this recipe so we stick to tinned.
The soup can be stored in the fridge for 3 days or in the freezer for 3 months, we recommend you store it before you add the parmesan as the saltiness of the parmesan can dominate the soup particularly when frozen. Just store in airtight container prior to adding the parmesan, and then on reheat add the parmesan.
