Strawberry & Passionfruit Cupcakes

Strawberry & Passionfruit Cupcakes – freshly chopped strawberries cooked inside a vanilla sponge cupcake, topped with a passionfruit and cream cheese frosting and sprinkled with a biscuit crumb

How it's doneDirections

Step 1

set the oven to 165C 365F or gas mark 3

Step 2

sieve the flour

Step 3

cut the butter into cubes

Step 4

add the flour, butter, sugar and salt to the food mixer

Step 5

add the baking powder beat till blended together

Step 6

add the vanilla essence mix together

Step 7

place the food mixer on medium speed slowly add the milk beat till blended together

Step 8

add the egg mix together

Step 9

place the paper cases into the tray

Step 10

wash the strawberries, dry the strawberries, hull the strawberries, chop the strawberries into small chunks

Step 11

share the chopped strawberries equally between the cases, add the cupcake mixture to the cases cook for 25 mins or until golden brown and bounces back when pressed test the cake using a skewer it should come out clean Leave to cool in the tin for 10 minutes

Step 12

place the cupcakes on a wire tray to cool fully

Step 13

put the biscuits in the food processor and blend to a crumb set a side

Step 14

when the cupcakes have cooled, sieve the contents of the passion fruit into a small bowl to remove the seeds combine the passion fruit and the cream cheese

Step 15

beat the butter and sugar mixture

Step 16

mix the butter mixture and cream cheese mixture together don’t over beat as it will become runny place on top of the cupcakes sprinkle with biscuit crumbs

  • 180 grams plain flour
  • 210 grams sugar caster
  • 2 tsp baking powder
  • 60 grams butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 pinch of salt
  • 12 strawberries
  • 50 grams Digestive biscuits
  • 160 ml milk (whole)
Toppings
  • 300 grams sugar icing
  • 50 grams butter
  • 125 grams cream cheese
  • 1passion fruit
